Apricot Chicken


8 chicken drumstick
olive oil
1 clove of garlic, minced
3~5 cloves of garlic, smashed
1/2 Spanish onion, sliced
2 tbsp. sake or white wine
3~4 tbsp. soy sauce
3~4 tbsp. apricot jam
1 bay leaf
black pepper
3 tbsp. raisins

1. In a skillet, heat olive oil over medium heat. Brown drumsticks for 3 to 4 minutes in oil until they begin to brown. Set aside.
2. In a pan, heat olive oil over medium heat and add minced garlic and onion. Saute onion for 5 to 8 minutes until they become tender.
3. Add sake, soy sauce, apricot jam, bay leaf, smashed garlic and black pepper. Mix well until jam melt completely. When it starts boiling, lower the heat and add drumsticks.
4. Simmer 10 minutes, then turn drumsticks over. Add raisins and simmer another 10 minutes.

Note: This dish is better the next day. Make sure you have leftovers. It goes well with rice and couscous. (I served with pastina and sauteed spinach this time.)
