Peach Dessert for Adult

2 Peaches (Cut into small pieces)
4 Tsp. sugar
4 Tbsp. Vodka
2 Tsp. lemon juice
Fresh mint leaves 5~6

In a glass ball, toss all ingredients and mix well. Refrigerate at least four hours.



I served it in a chilled martini glass with a splash of chilled vodka. I refrigerated four hours, but it taste much better the next day.
It can be dessert and also aperitif.

Perfect for hot summer day!!

Cool Tomato Pasta


1/2 pound of cappellini pasta, uncooked
28 ounces canned whole tomato, diced
3 tbs. tomato juice(from the whole tomato)
2 tsp. basil pesto
6~7 large fresh mint leaves, cut into thin stripes
4 ~5 tbsp. olive oil
2 tsp. lemon juice
salt and pepper

garnish: fresh mint leaves if desired

1. Put all ingredients, except pasta, into a ball. Mix well and adjust the taste with salt and pepper. Chill in the refrigerator for about 10 minutes.
2. Boil water and add a good amount of salt. Cook cappellini in the boiling water about 1~2minutes longer than al dente.
3. When cappellini is cooked, put them into a ice cold water and cool them down.
4. Drain the water well, and mix with chilled tomato sauce.
5. Garnish with mint leaves

Healthy! Carrot Tuna Salad


(3 to 4 servings)
3 carrot shredded
1 canned tuna(in water) drained
1/2 jar of marinated artichoke hearts
1~1.5 Tbsp. sour cream
1 Tbsp. lemon juice
1 Tsp. Dijon mastered
Dill (dry)

Combine all ingredients and refrigerate about 10 minutes.

Note: This is perfect for summer! You may add raisins.

Apricot Chicken


8 chicken drumstick
olive oil
1 clove of garlic, minced
3~5 cloves of garlic, smashed
1/2 Spanish onion, sliced
2 tbsp. sake or white wine
3~4 tbsp. soy sauce
3~4 tbsp. apricot jam
1 bay leaf
black pepper
3 tbsp. raisins

1. In a skillet, heat olive oil over medium heat. Brown drumsticks for 3 to 4 minutes in oil until they begin to brown. Set aside.
2. In a pan, heat olive oil over medium heat and add minced garlic and onion. Saute onion for 5 to 8 minutes until they become tender.
3. Add sake, soy sauce, apricot jam, bay leaf, smashed garlic and black pepper. Mix well until jam melt completely. When it starts boiling, lower the heat and add drumsticks.
4. Simmer 10 minutes, then turn drumsticks over. Add raisins and simmer another 10 minutes.

Note: This dish is better the next day. Make sure you have leftovers. It goes well with rice and couscous. (I served with pastina and sauteed spinach this time.)

Let’s talk cocktail…

I like bloody mary. But I’m disappointed by the bloody mary at bars or clubs so many times. They often use “bloody mary mix,” and sometimes it’s too hot or has too much Worcester sauce in it, and the bar tenders can’t adjust it because it’s a “mix.” That’s why I like "My" bloody mary the best. What you need is:

Tomato juice
Vodka
Little bit of Worcester sauce
Hot sauce (Tabasco etc.)
Celery salt
Lime
Ice cube

Ice cubes are important. I think it’s too thick without it…
This way, you can adjust alcohol contents, too.

Party ideas - more appetizers

I had a hard time when I threw a party for the first time. I didn’t know how to manage time for cooking, talking to friends …. I’m sure many of you have the similar experiences. Here is some appetizers that you can prepare ahead of time. When your friends arrive, you just need to serve them. It really helps.

Dips

There are many kinds of dips. What you need to know is the base. Once you know it, you can make many kinds of dips! I recommend making it at least 2-3 hours before you serve them. (The flavor comes out from the ingredients that way.)
Serve them with stick vegetables.

Dip Base

½ cup Sour cream
½ cup Mayonnaise
Salt and pepper to taste

Mix them all together.

Versions…

Scallion Dip
Chop four scallions and add to the base. (I like lots of scallion in it. Probably I use more than four…)

Italian herb dips
Add dried herbs such as dill, oregano etc, and a clove of minced garlic and little bit of lemon juice.

Carry dip
Add curry powder.


Rum Raisin Cream Cheese

My friends loved this. This is for adult only….

½ cup Raisin
Rum
1 pk of cream cheese

Put raison in a small jar and add rum until the raisin is covered. Let it sit for at least a week. Ideally, you want mix it every day so that the raisin absorb rum equally. You can make a lot of them at a time. You can keep it 3-4 months. It’s good for baking cake, too.

Mis cream cheese(room temperature) and the rum raisin. You can use the raisin as much as or as little as you want.If you have energy to whip the cheese, that's better. I recommend to serve this at room temperature. It gets little hard if you put it in the refrigerator.

Seave with your favorite crackers.

Tortilla Pizza

It’s quick, easy and perfect for an appetizer.

12 in flour tortilla
Your favorite tomato sauce or tomato salsa
Your favorite toppings such as:
Salami, ham, anchovy(my favorite), sliced green pepper, sliced onion, sliced
mushroom, (for salsa pizza) ground beef cooked with Mexican spice mix.
Shredded mozzarella cheese

1. Pre-heat the oven at 370°
2. Spread tomato sauce or salsa on a tortilla.
3. Place your favorite toppings
4. Sprinkle shredded mozzarella cheese on top
5. Cook it about 8-10 minutes until the cheese melts and the edge of the tortilla becomes crunchy. (Adjust according to your oven. It may take more or less.)

*If you are using tomato sauce, parmesan cheese, or fresh mozzarella with basil leaves is also recommended.


Let’s talk Wine...

Wine: I recommend Italian red for this dish. For example, Chianti, Sangiovese and Valpolicella. Basically, many Italian red with marked acidity goes well with Italian local flavor: tomato sauce and olive oil.
One of my favorite Italian red wines is Allegrini Valpolicella Classico 2002. It’s a lovely wine with plummy, cherry and herby nose. It’s so smooth, and goes well with many kinds of antipasti. I call such wine, “(food) friendly.”
Try it! You won’t be disappointed.
How can you start fun dining without cocktail?

Welcome Cocktail
1 shot Vodka
1 shot Cranberry twist mix
2 shots orange juice

ice cubes

Shake them all together and pour into a martini glass. Serve it with a slice of lime.

*If you want to make it stronger, you can use 2 shots of vodka and 1 shot of orange juice instead.
